Too many to chose from. I guess if i had to make a list my all time favourite hip hop track would be TROY (They Reminisce Over You) by Pete Rock & CL Smooth.
For all you new jacks get this track quick. It's an oldie (92?) but a goodie. As soon as the horns come in, the track takes you to a whole nother place. Beautiful.
IMO its the best song, with the best beat, made by close to the greatest hip hop producer ever.
"So What'cha Want" off the Beastie Boys' Check Your Head album blew my mind the first time i heard it and still does.
Outkast's "Ms. Jackson" is a masterpiece.
Kid Rock's "Devil Without a Cause" always gets the party started!

At the moment it would have to be -
Snoop Dogg/Pharrell "Beautiful"
*Buddy - De La Soul featuring the Jungle Brothers, Q-tip
*Hydrogen Slush - The Isolationist
*Louder than a bomb - Public Enemy (first ever PE song I heard in 87 on Triple j)
*Can I kick it? - A Tribe Called Quest..in fact that whole album, Peoples Instictive travels and the paths of rythm, was a ground breaking LP when it came out. They have made fluff ever since.
*Dr Doom and Dr Octagon..actually anything by kool Keith
*Passing me by - The Pharcyde. (another friggen awesome album)
*Anything by Solesides and Quannium Spectrum.
