UFC 31 (Rizzo vs Couture, Serra vs Carter)

UFC 34 (Hughes vs Newton, Penn vs Uno)

Brad's covered most of the good recent cards. I'd add UFC 95 to the list.... had some great finishes and fights on it.

Man, I loved Coleman v Don Frye back in UFC 10. Just brutal.

UFC 1 definitely so you can see what the fuss is all about,
UFC 6 for the entrance of Tank Abbott
UFC 22 for Tito v Frank Shamrock
UFC 116, great card with some sick fights
UFC 140, some brutal finishes on this
UFC 101, some great fights

That's off the top of my head. And don't bother with UFC V, just trust me, don't bother!

I'd recommend watching Griffen Vs Bonnar in the Ultimate Fighter season 1 finale.

Silva/Sonnen I have on dvd. Some of the fights aren't much chop, but the main event, and the Struve fight on the undercard are great

Prob one of the best smash ups/technical fight (that i've seen) was Hendo v Shogun...such a brutal match that one...
