Listing colleges is a bit of a cheat, since many of them offer athletic scholarships. Schools like Aquinas in WA produce most of the state's professional athletes each year.

Strathmore Football Club have named a number of VFL/AFL players as having been recruited from there:

Glenn Manton, Steven Clark, Ed Considine, Mark Eustice, Daryl Gerlach, Geoff Gosper, Michael Thompson, Adam Contessa, Lance Picioane, Scott West, Jackson Trengrove, Ryan O'Keefe, James Polkinghorne.

Includes some very good names going back to the 60's.

I think Bullcreek Leeming Junior Football Club wins in the modern era.

Three Brownlow medallists (Black, Cousins, Woewodin). Five premierships (Black x 3, Josh Carr, Ben Cousins). One Norm Smith (Black). Two Rising Stars (Cousins, Palmer).

Whitford JFC has the Van Berlo brothers, Brett Heady, Ryan Turnbull, Andrew Donnelly, Steven Browne, Michael Pettigrew - not classy players but not a bad effort & there may be a couple I am forgetting.

Kingsley JFC has the one & only Kepler Bradley.
 
St Josephs in the Geelong Footy League would be up there,
off the top of my head they have produced Matthew Scarlett, Cameron Ling, Nick Maxwell, Taylor Adams, Barry Stoneham, plus many others

I'd go with this, St Joeys, particular pre-draft days when clubs had their zones.

LeCras brothers are Whitfords as well and Josh Smith who played at North for a couple of years.

At one stage Le Cras, Van Berlo and Smith were all playing in the same junior side.

Jarrad Schofield was a kingsley boy I think.
 
It's a very open-ended question. In SA you can play in a Junior District League, a School league (public or private) or play for the Junior team of an SANFL club. And a player will most likely play for all of the above at some time in their junior career (if we're looking for the better ones). I assume it's the same in Vic, WA and a much lesser extent in non-AFL states.

So which club 'produced' them?

The technical answer is "Mr and Mrs Selwood" have been the most successful at producing AFL players.
