Question; when you wrap your brisket do you have the foil/butchers paper folds facing up or down. As in, would any moisture be trapped and not able to leak out or would it make its way out under the meat?

Food is my biggest expense, I'm a sucker for spending money on good food. I always say to my wife I shouldn't be allowed in a butchers or bottle shop by myself. I'm like a kid in a candy store.
And tbf I find cooking my destress so I do 99% of the cooking in my place. Even over NYE we were in Phillip Island with friends for 4 nights and I cooked for all over us most nights. The butcher in San Remo loved me when I dropped $150 on 6 rib eyes and I was back the next day for more meat lol

So I've just had my first kid and it's changed my perspective career wise from "career chaser" to "enough".
It's prompted some serious thinking about moving to Hobart.... its a place I adore and has all of the simple things that make me happy.
I've grown up in Melbourne my entire life, but I'm falling out of love with it. It's starting to feel like the Sydney we used to feel superior to in 2005. Housing, urban sprawl and the traffic are making me insane.
Anyone made such a move and can tell me all the down sides?
So easy to rack up a big bill at a nice butcher or market, well worth it though.
Also really enjoy cooking as a wind down after work. Kind of meditative going through the process and getting a good feed out of it helps too.

I love the smoker but I find using the charcoal rotisserie so much more therapeutic and engaging. You need to manage the coals and I usually have a couple of ciders whilst doing it. Your crackle looks good. A cheat I use is stopping the rotisserie in spots where it needs a bit more work on the crackle and it works a treat.Pork on the spit tonight

I use foil and wrap it with the fat side on top and a bit of coke sprayong in for extra moisture. I try to not let the moisture escape personally. But I mix it up, Saturday was the first time in ages that I didn't inject the meat for instance
But I do prefer butchers paper when I can get hold of it

Not a cheat, it's a pro move!I kinda cheated on the crackling too. 20 mins with the spit low close to the coals. Then stop it for 5-10 seconds with the crackling faced down on the coals

Really?The downside is that everyone in Melbourne is moving to Tasmania, and Hobart is far less well prepared for the inevitable explosion of urban sprawl and traffic
