TV: Spartacus. Stick with it, the first three or four episodes are really quite ordinary, but then it finds its voice (an episode titled The Thing in the Pit) and from then on is fantastic.
Film: If multiples are allowed, then either The Godfather trilogy or the Tarantino catalogue. If not, then The Assassination of Jesse James by the Coward Robert Ford.
