As a March DOB he would have been 17 by the time it was found to be an issue. For context Ben Reid was on an AFL list with SOB at a similar age.
My guess is that every 17yo in the country that has a dairy intolerance significant enough to require a parent to help manage it should be on top of it as a prospective professional athlete. If he were a swimmer or gymnast by the same age he could have competed at an Olympic Games. Dietary needs are a non issue it’s the need for the support of the parent to help manage it that raises the red flag.
I'm pretty sure that kids looking to play professional sport aren't robots that all look and think in the same way, especially the Gen Z'ers we are now discussing, so comparing them to other kids who started their career even only 20-ish years ago would be an exercise in folly.
There are also countless stories of how young players have leant on the support of their family or a "sponsor" family (not sure if that's the right term for it) to get this stuff right leading up to and after being drafted, so I'm not even sure why you're chipping this kid for being the same really because the only difference here is the details of how much support other prospects may or may not have needed to get to this point / will need going forward is not at all visible to you.
