Mashed spuds is my favourite. The recipe that comes with the thermomix is brilliant. cube 1kg worth of potatoes, chuck it in for 25mins with milk. Add in a pinch of salt and pepper, butter and Parmesan. 30secs more. So bloody good.
Sounds lazy, just peel em cut em in half or of equal large size, boil em with heaps of salt in the water, strain em, mash em when done, add a little milk, couple of tablespoons of butter for consistency and salt and pepper to taste, bang.....

Have you ever tried cauliflower rice? Sounds odd but done right is amazingly good.
No I haven't, sounds weird. I'm a big fan of garlic rice though. Peel a couple of cloves, cut em into thin strips or whole (whichever preferred) and boil away.

I wouldn't let that campaigner assist me in anything..can't stand him.
Watch one of his cooking shows where he's at home in his own kitchen. Completely different to the Hell's Kitchen Ramsay. He's really just a softy at heart.

Are you sure you haven't mixed up the photo with the one of bub's first stool?
Ha! no!
Indian is one of my specialties, no ********* disgusting curry powder either, I grind and fry all my own spices. I usually make it a day or 2 before and let it sit and infuse.

Hard to tell what the meat is, chicken thigh fillets?

What's in the sauce? Goo?
Chicken legs. The sauce starts with a paste of onions, ginger and garlic. You fry it then add your crushed spices and chicken..add the warm water, a bit of tomato..more spices ect ect. In this dish you finish it off with onion rings fried in ghee and mixed through. It's pretty amazing, the whole house smells wonderful. I can't stand Indian once I've smelly that curry powder crap.

I must admit i was very skeptical about it but a mate convinced me. I really like it and it's easy. I prefer it to couscous.

Might have to make some on the weekend now you've mentioned it

I thought that but when you add milk it cools it down. This way everything comes out smoking hot!

Do you ever use garum masala in anything? Smells great but seems a bit aromatic and sweet for savoury things
Yea but I make my own not that shop bought stuff, its nowhere near what it should taste like in proper Indian food.
2 tablespoons cinnamon sticks
2 1/2 tablespoons cardamom pods, the green ones
1 tablespoon whole cloves
1/2 a whole nutmeg broken up.

Stir them in a very hot pan for a minute till you can smell the flavours releasing..not to long. Cool them down on a plate then grind them in a coffee grinder. you will smell and taste the difference immediately from the shop bough stuff. I use it a lot in Indian cooking, it finishes a dish off nicely..I also use it in some soups. You gotta know how to use it and how much though.

Yeah I love the smell. I use it to make bombay potatoes. Have them with some curried sausages.

A mate visits his family in india once a year so i get him to bring some back with him.
