My signature dish is a chicken risotto.

I started off following a recipe, and gradually it's got to the point that apart from basic ingredients, I no longer follow it at all.

As others have said, experimentation is the key. And don't panic if you reckon you've put too much of one thing in- you can always find a flavour or other ingredient to counterbalance.

I rarely, if ever, use salt.
 
recipe books, but those ones that go into detail about all sorts of ingredients and techniques. salvos is a good place to drop a couple of bucks for those.
hanging around other people that can cook, bound to pick up a few things.
