Sweet and sour breaded pork chop with fried rice. Not the usual sweet and sour pork balls. Used to be quite popular at food courts back in the 80s/90s.
 
There was a place that did a mean Szechuan chicken when I was a kid. Nothing has matched up to it since.

I like Szechuan beef/chicken too along with the sweet and sour pork and the classic lemon chicken or chicken with cashew nuts.

I got a rude shock when a Chinese girl I worked with took me to a proper Chinese restaurant that didn't serve any of those dishes

It was dishes like boiled chicken feet, a goat's anus and fried dog's testicles, I felt like yelling "I'm a Celebrity Get Me Out of Here'

I didn't want to offend her though, I just said I'm not all that hungry, I had a big breakfast.
 
Dim Sum is the god tier food experience.

I'll judge Chinese restaurants on their fried (or even steamed) rice though - if they can't manage that they're not worth bothering with.

Still searching for a good Char Siew BBQ Pork in Perth after the Chinese BBQ place at the International Eating House in Vic Park shut up shop. Was devastated when that place closed :(
