I always wonder what do umpires do if they need a toilet break? I've seen so many 5 hour matches live and the umpire doesn't leave the court .

Not really. That occured in 2010

It wasn't until 2019 Wimbledon began trialling tiebreakers or shorter fifth sets.

Idk. I reckon it should just be a normal 7 point tiebreak. To maintain continuity.
