One interesting new feature is that it is no longer mandatory to have a computer to activate and set up an iOS device.
I still think they need to do more with the home screen, especially on the iPad, those boring square icons waste beautiful screen real-estate which could be used in a much better way!
It has been an absolute joke that you cannot purchase a phone and start using it without having a computer with itunes on standby! I guess Apple have done their job of forcing every household computer to have itunes on it.

Widgets are the way to go, even MS are implementing "live tiles" if you check out their Windows 8 demo (better versions of the WP7 tiles).

Does the PC/Mac recognise it plugged in?My iphone stopped appearing in iTunes a while back. Have googled for ages for no result. Any ideas?

Have you tried different cords?
Maybe try un/reinstalling iTunes and therefore all the drivers that come with it.
