Geez Rob, everyone knows thisTwo reasons.
1. A poached egg has to be poached unbroken, and by breaking your eggs into teacups you can make sure it is whole before putting it in the water
2. The cup allows you to transfer the egg to the poaching water more gently which helps the egg to retain shape
