If you par boil them to soften them up a bit you can then cook them at a higher heat with plenty of olive oil and a bit of salt (I also add oregano) and that should do the trick.

I love roast potatoes, and what you have just read is the full extent of my cooking prowess (except for steak).

And to this, before and during the cooking process crush the potatoes a little with a fork or masher to increase the surface area of the potatoes which is what gets the crispiness.

This is the absolute key to roast spuds.

Yep, that works. Usually I'll toss them in a colander. Works well.

It's not that widely available in Aus unfortunately. Ask your local fruit and veg store if they'd order, or hit up any local farmer markets. If you have no luck just keep investigating further, but as far as I know, the big chains like Coles and Safeway ect don't stock it.

1. peel
2. boil - salted water (to get salt in)
3. strain
to get crunchy -
4. put back in pot and put the lid on... toss the boiled potatoes around for a bit so they all scuff up
5. roast in a tray with oil... the scuffing is what makes them crunchy
 
I saw bunches of Kale for $4 at the QVM today. Standing at the jam donut van and facing the fruit and veg it's on the far right aisle down with the organic vegetables.

Two ways- cut them up smaller, and they tend to get crunchier. I tend to go for not much bigger than a potato wedge. And put them on the outer edge of your roasting pan.

Or, for larger ones, par boil them first, for about 8 mins. Then, put them in a colander and drain them well, but also shake them to roughen the edges and surface. You can also scratch them a bit with a fork. Gives the oil somewhere to stick and creates crunchy bits.

Finally, if you're roasting meat with your potatoes, when you take it out to let it rest, crank the oven up to 250 for those last ten or so minutes.

Yeah i'm the same. Right handed, but anything with a screw lid like a jar or soft drink bottle i always open left handed.

Tuscan cabbage is a type of Kale people. Coles sells Tuscan cabbage.

Just used the "wipe a banana peel over a completely destroyed DVD/CD to get it working again" trick.

Worked a charm.

Kids dancing to the wiggles for the next hour though.
 
Woolworths sells Kale in bags in the section with ready made salads etc.

On another note with a disc, if there is a nasty scratch across the disc, put some toothpaste on it and try and make new scratches across the initial scratch. Scratches that go up the disc don't ruin it, it's the ones that go across them that kill them. That's why when you clean a disc you are not supposed to wipe around the disc.
Had a GTA game that had a fat scratch in it because the ps2 fell on the ground and inside it the disc got churned, it didn't work thereafter. I Scratched the living daylights out of it up the disc where the first scratch was and it played like a charm for the rest of it's life.
