I read the instructions, they were like 10 pages long and was like * this, let's play kids Monopoly instead

Yep, Saint Louis ribs and 2.5kg of Cape Grim brisket. Brisket was amazing and ribs good.

Question; when you wrap your brisket do you have the foil/butchers paper folds facing up or down. As in, would any moisture be trapped and not able to leak out or would it make its way out under the meat?

I did a Cape grim brisket too

I use foil and wrap it with the fat side on top and a bit of coke sprayong in for extra moisture. I try to not let the moisture escape personally. But I mix it up, Saturday was the first time in ages that I didn't inject the meat for instance

But I do prefer butchers paper when I can get hold of it

So I've just had my first kid and it's changed my perspective career wise from "career chaser" to "enough".

It's prompted some serious thinking about moving to Hobart.... its a place I adore and has all of the simple things that make me happy.

I've grown up in Melbourne my entire life, but I'm falling out of love with it. It's starting to feel like the Sydney we used to feel superior to in 2005. Housing, urban sprawl and the traffic are making me insane.

Anyone made such a move and can tell me all the down sides?

Hey Stinger, you post quite a few pics of places you eat out at - which I find interesting… But… the stuff you cook always looks way nicer. That pork looks like heaven on a spit.

Mate I eat out way more than I post, I just keep the food eaten out to American bbq

Food is my biggest expense, I'm a sucker for spending money on good food. I always say to my wife I shouldn't be allowed in a butchers or bottle shop by myself. I'm like a kid in a candy store.

And tbf I find cooking my destress so I do 99% of the cooking in my place. Even over NYE we were in Phillip Island with friends for 4 nights and I cooked for all over us most nights. The butcher in San Remo loved me when I dropped $150 on 6 rib eyes and I was back the next day for more meat lol

Moved to Brisbane from Sydney around 18 months ago, just after the birth of my first child. Still a career chaser but the change of scene to a city that has a more relaxed vibe has been fantastic, especially having some good friends and family here too.

Sydney was an exceptionally hard city to live in for me, was there 4.5 years and it really ground me down.

I love Melbourne, will always be home and the fact I've not been there in nearly 2 years breaks my heart, but I can understand and advocate for a fresh start too. I've lived in several different cities and the thing is, you can always just move again if it doesn't tick the box.

Yeah I'm a sucker for a big fat juicy rib eye. Those aren't cheap at a decent butcher

I swear I should have been chef (who specialises in meat). I can get hooked into watching YouTube clips on different ways, styles to cook meat dishes

For what it’s worth, I think it is a great idea. Two of my sisters work for the orchestra there and the rest of my family have drifted down there in turn. Tasmania is very beautiful

I love the smoker but I find using the charcoal rotisserie so much more therapeutic and engaging. You need to manage the coals and I usually have a couple of ciders whilst doing it. Your crackle looks good. A cheat I use is stopping the rotisserie in spots where it needs a bit more work on the crackle and it works a treat.

Yeah I agree but I probably appreciate smoked meats more because of the difficulty especially with brisket.

But I agree sitting in front of the spit having a few beers while it cooks is quite relaxing. I might do it this Sunday while I watch the NFL playoffs

I kinda cheated on the crackling too. 20 mins with the spit low close to the coals. Then stop it for 5-10 seconds with the crackling faced down on the coals

It's definitely been good for me and my family. The same sort of reasoning too - my daughter was coming up to kindergarten age and we thought, "it's now or never". Best decision we ever made, I think it's a good move provided you can buy into the property market and land a job.

Not a cheat, it's a pro move!

I also always do a piece of pig skin in the oven when I do pork. There can never be enough crackling! Sort of reverse Highlander.

The downside is that everyone in Melbourne is moving to Tasmania, and Hobart is far less well prepared for the inevitable explosion of urban sprawl and traffic

I know a fair few people that are moving to Qland and none that are moving to Tasmania

I ned a new challenge to cook on

Was contemplating an Asado parrilla grill bbq

But I know I will lose interest in cooking on that fairly quickly
