They would have to just delist him yeah? Retire his number in his honour?

The number shouldn't be retired entirely, JMac wasn't the first to wear it. Chad Cornes wore it for a decade or so. Ideally, it'd be rested for a few years, and then giving it to a younger bloke telling them of the legacy of John McCarthy and Chad Cornes, so that they'd be proud to wear the number 35.
