They've been doing this stuff since the original SARS.

Which had multiple outbreaks from animal reservoirs in the lead up to its major outbreak in 2003.

One of the reasons they've been making SARS like coronaviruses in labs since is because the world dodged a bullet with the original SARS. Imagine if COVID had a 10% death rate instead of under 1 in 1000. Australia would have locked its borders tight and a large part of the developed world would have collapsed and maybe never recovered.
