Depends on the product. Some things I wouldn't touch, the sort of thing that goes off quickly, then there is stuff that I'd use for a month or two after the date. And things like Brie and Camembert are absolutely no good before their use by date.

Most things it wouldn't worry me if the use-by date's expired, unless they've obviously gone off.
The 2 big exceptions are bread and milk. My bread has to be fresh, and the excessive quantities of coffee I drink need milk that hasn't gone off. And taking a whiff of the carton isn't the most reliable guide - I use the use by date to determine whether the milk's any good.
And I live within a minute's walk of a 24-hour servo, so it's no problem getting fresh bread or milk at any time if I need it.

Things you put in the freezer NEVER go off...

Coffee doesn't have any problems, 6 months over the use by, still tasted fine.

Yoghurt, Milk, Cheese etc. I would stay away from though.

I don't know, maybe it's just me but I won't touch ANYTHING that's even a day over it's use by date.

Milk and dairy products aren't a big issue for me, since I can't have them.

And with bread, unless it's absolutely fresh I won't touch it anyways.

And with everything else, like I said, not if it's past it's use by date.

I don't drink Milk if its been open in the fridge for long than 3 days no matter how far away from the use by date it is

I don't eat anything if its on its last day before use by

I buy fresh bread for that day and MAYBE the next day, whatevers left, the birds get.

I can't even eat cold pizza thats been in the fridge over night lol

I pretty much buy what i need as i need it, that way its always fresh :)
