They do have scripted/set up bits on The Block when it involves some product placement they're pushing. But I don't think the general interactions are scripted. Imagine having to do all that building/styling stuff and learn a script on top of it. It really would be impossible. The only other times where the contestants could be told what to say are the diary-type interviews. But even MasterChef does that.
