It would be an affront to the natural order to have Pepsi and Coke in the same machine.

If you can source Dr. Pepper then get it in there.
Cheapest I can find on the west Coast is about $16 for a 10 pack. Could be a decent novelty addition.

I worked at a business where we sold bottled drinks and a bit of junk food over the counter as a side.

Water would sell three times regular coke which in turn would sell about 5 times regular Mother and pretty much everything else would go out of date before you sold a 24 carton of it.

Warehouse is probably a little different if they have a lunch room with filtered water available where they may not be so keen on buying water but there are always people who won't drink tap water....

I'd go:

Regular Coke for a heap of slots
Regular Mount Franklin water (not that sparkling bullshit)
Zero sugar Coke - Coke really push this shit and I think would be way more popular than Diet Coke especially amongst blokes at a warehouse
Regular Mother
Salt and vinegar chips - Added bonus they will buy a drink afterwards :)
Kit kat
Whatever the records say is selling well at each particular location

How many different products are you allowed to have? Some vending machines have a whole row of Coke and others have two slots. The popular stuff at my work is Coke, Coke Zero, Pepsi Max and Sprite.

Holds 600 cans so selection isn’t an issue; currently has about 8 rows of coke

The Japanese are the kings of vending machines.

Not only can you get weird shit like used underwear they have regular vending machines that dispense beer, standard cold drinks like Coke, water, iced tea etc. and also hot drinks like tea and coffee in a can.

I put my 150 Yen or whatever it was into one machine expecting a can of Coke and out popped a paper cup with Coke and ice and a straw.
 
If it's going to be in a workshop with lots of tough tradie types then I suggest:

5 different flavours of kombucha
Coconut milk choc shakes
Ice Chai Latte
Kale & spinach smoothies
OptiSlim shakes

You'll be retiring in the Bahamas in no time! $$$$
