I've seen some umpires who have a wooden card with a powder-coated surface that you can write on with a pencil. Once the game is over, they transfer the scores onto an official card and they rub out the pencil marks.

It's hard to explain but - you pull down the cloth of the flag so it's taut, you then loop the flag around the stick, then tuck the end of the flag between the cloth and the stick. If you do it right, when you take the flag out for waving you can then pull the tail of the flag and it unwraps itself.
