I know on Sportsbet, my limited playing around with the Cashout option suggests it only pays back about 50% of the odds for your successful legs to date - you'd still be much, much better off hedging if you found yourself likely to be in that situation at 4.30pm on Sunday. (With the 3.20 Sunday game, even that's going to be really hard)
