    Agreed on the bechamel. I use no mince for lasagne and ragu sauces, slow cooked meat (4-5 hours) all the way. Falling apart but still a bit chunky, way more flavour. Chucked steak works fine, can do a pork and beef mix if preferred, but I usually just stick with beef.
