I think if you go at a weight that is not too heavy and really go for form and concentrate on the squeeze, it is quite possible to bring in the lats plenty.
I guess I should have said that it's more about trying to minimise...

Agree.
Behind the neck stuff gets my shoulders and nack a bit agro. Plus I feel it limits what you could lift in terms of weight.

I would agree with this. I do like working out on my own as it gives you the freedom to do what you like in your own time.
On the other hand, I do like having a workout partner, provided they are on the same level, or higher...

Always use a spotter.
If you don't have a spotter, try and use a power rack with safety bars on the sides.

I've tried the deep tissue stretching and things like rest-pause etc.
