Im reading the ICC rule book now, and can't find anything in there regarding a roof

Though,

Rule 20 (Dead Ball)

20.1 (Ball is dead)

20.1.1.1 it is finally settled in the hands of the wicket-keeper or of the bowler.

Could that mean stumpings can't occur as it's a dead ball once it reaches the wicket-keepers hands

And does that mean run outs can only occur on direct hits?
