Polenta is a dish made from boiled cornmeal. It is delicious, inexpensive and nutritious. Although it is considered to be a peasant food, it is not uncommon for top restaurants to have it on the menu.

It's my favourite dish.

I buy it in organic form from the local health foods store. I add whole chick peas to the mix, let it set in the fridge, cut it up into slices and then bake it!

I know most who like polenta prefer to add butter and cheese to the mix but I'm of the view that this spoils the true texture and taste of polenta.

Yep, when done properly its delicious and the perfect replacement say for mash in some dishes. Have also had it in restaurants where its gritty as **** and near unedible.

It's more of a northern Italian thing. They say that you can do anything with it that can be done with pasta. I disagree, but I disagree respectfully.

To make polenta properly requires being Johnny on the Spot. It requires a commitment of half an hour or more standing right there at the stove stirring and babying it. As thanks, the polenta pops and spits every so often and flings up a mini lava ball to seek out a delicate piece of your flesh to scald.

I don't mind putting a lot of work into a dish, but if it's going to be a Johnny Spot dish where I can't turn my back on it to go take a piss, I'd prefer Risotto. Also I like making my own pasta from scratch. I can't get behind the notion that polenta is a perfectly good substitute.

Bottom line: It's really good stuff.....once in a while.
 
I usually have it for breakfast with sausages - ie chorizo, bratwurst, all purpose supermarket BBQ.

Add a pinch of salt/fish sauce + middle eastern spice mix
 
There is an insult in Italian that roughly translates to "Polenta-eater". If that is any guide to what to food will taste like, I am staying far away.
 
They served this up in the MCC dining room once. No one on our table got close to finishing it. Was as dry as an arabs sandal and really ruined the meal.

Northern Italian dish which is correctly described as "Peasant food". Can be eaten in a variety of ways with Quails or Rabbit. As a child, I didn't like the idea of eating Rabbit or Quails, so I had it prepared with mince or a bolognese sauce. Polenta is my favorite dish.

The preparation takes a long time, and involves standing over the saucepan for hours, stirring the pot. One relative bought a large pot with a motorized attachment that rotated around the edge of the pot. So it did all the hard work for you !

My preferred plate of polenta involves the extra step of cutting the polenta into slices and baking it. The sides and top of the polenta become crispy and the bottom is still moist. I turn the polenta slice upside down and pour the sauce on the soft side.

There is a "1 minute polenta" on the supermarket shelves - and it is not bad at all. I still prefer the traditional dish. Restaurants do serve Polenta, but not to my liking - often too dry.
