Both people who add little deft bits to albums (Nigel Godrich) and people who produce their own (usually electronic) music (Jamie xx). Or both (Eno)!
My shouts:
Mid 2000s Paul Epworth knew how to nail a song and makes something so passé sound like a zeitgeist; not a cringe.
Nigel Godrich knows how to make Radiohead sound at their best. He doesn't add to much, but you can tell he has a symbiotic relationship with that band (especially with Thom). He just gets it.
Pete Rock. Absolute master of hip hop, love his stuff.
Ariel Rechtshaid. A really interesting current producer. Sometimes his stuff can sound a bit thin, metallic, and basically like a thin sheet of metal... sort of bendable, a bit tinny, a bit shallow, but he really knows how to make everything breath and he's yet to make anything sound exploded but never makes stuff sound too hollow.
