In good wet seasons roos breed up incredibly fast and in dry years they cut there breeding back.

You're over cooking your roo Uncle Steve. Rare to Medium Rare is the only way to eat Skippy.

yep, I prefer mine rare as well. overcooked roo has the consistency of leather roo risotto is good too. I like to eat kangaroo with a nice Pinot Noir, a light red to balance the gaminess of the meat.

aborigines have been eating roo and using their hides for centuries - no sense in changing now.
