99% sure they do, the kick to themselves puts the ball into the field of play, everything after that is counted as per normal. This is way I don't think kicking in is a disadvantage to a player - there's more chance a player will kick to themselves than there is them receiving a kickout form another player. Therefore it'll only increase their stats.
 
100% it does count as a stat, regardless if they kick to themselves or not. Champion data stats consider everything - if the player kicks in (not to himself) and kicks it straight to the opposition who goals, thats a critical turnover. likewise, if they kicking a booming pass which is accurate and begins a "score chain" they score more points.

Thats the beauty of SC opposed to DT, and why players such as Geelong's hunt and Kennelly score more in SC than DT.

Normal kickouts you won't get points. So in your example the actual kickout is when they kick to themselves. The other kick is just a normal kick and not considered the kickout.

However if the player who does the kickout say kick straight to an opposition and they mark the ball or gets their kick smothered by the man on the mark. Then the player who did the kickout would most likely register a clanger aka negative points.
 
Not sure on this but I heard that if the person kicking out did a long effective kick for example they got points for it (not sure if it was full points though) but I don't know for certain. I know in DT a kick in doesn't count, but I think SC is different.
