Most Pointless Enemy

By the end of the game you could kill them though couldn't you? How?

IIRC you could slash at their soft, soft underbellies when they came close (however waiting too long would make you slash their blades which doesn't hurt them in the slightest).

Another pointless enemy would have to be those annoying leaches in Resident Evil Zero!
