What are the major differences? I love settlers but haven't really expanded either.
Cities now produce commodites as well as their resource. Commodities (coin, book, cloth) can then be sold for 'improvements' in your city.

Every Dice roll you now have a chance to get a development card, and the more improvements you have the higher the chance.

They also added the knight and barbarian. The barbarian comes and attacks the settlement and Knights are used to defend yourself from desrruction.

It adds more things for you to do, and the resources needed are more balanced. It gives more fun to the person in last, which can be a sad and unfun place to be.
 
Cities and Knights seems to be the one most people recommend. After a few games, the Catan base game is starting to feel reasonably simple.

I liked the idea of a bit more exploration of the world and spreading the settlements out a bit, hence why I went for Explorers and Pirates.
