If you're using a fan-forced oven then lower the temp by 20 degrees and cook for 20-30 mins longer.
190 is a little steep. 175 for 45 min then rest for 10 min before cutting. Inside will continue to cook from the internal heat without effecting the pastryIt was in at 190ish for maybe 35 mins?
Pastry was definitely cooked, any longer would have burned.

Never made them way too fiddly. Could eat 50 butOr dolmades.

You are dead to mePastisio is way overrated.. just a worse version of lasagna imo
