Ok, I've got this worked out.

I called an ER Doctor friend of mine who happens to be just as bored as I am at the moment.

Obviously human flesh is a red meat. The doc says that because of the way the human body processes and stores sugars, our meat would necessarily be a bit more sweeter than a...cow for instance. Therefore, you would want to pick a dry red wine when dining on long john.

It all depends of course on whether you want to flatter the dish, or reveal the subtle facets and contrasts of the dish. One must also consider the sauce used in preparation of the human in question.

We've decided that the best bet regardless is a Cabernet with mellowed tannins. A nice Pinot Gris would do wonders regardless.
Serving Frank up as cold, shaved deli meat? A white bordeaux could actually work here. Spicy meats - like Thai people - would demand something that can cut through like a deep heavy Red Zinfadel.

For things like kidneys, leber, brains, pancreas and such we're going with the 'the man' Hannibal. Fava beans and Chianti.

Those are our choices. You'll be happy to know that I've also e-mailed a prestigious French winery with these questions. When the frogs get back to me, I'll pass that along as well.

According to Polynesian islanders (who knew about these things, before their habits were changed by interfering missionaries...), their favourite meat is SPAM, which they say tastes very much like human flesh.

Apologies to any islanders on these boards but I read it in Paul Theroux's travel book, The Happy Isles of Oceania.

I read about that during my web search for 'the taste of human flesh.' Theroux was only joking. As it turns out, the real reason they eat the wonderful SPAM is because it's cheap.

References to human flesh as 'long pig' have more to do with the texture and appearance than the flavor.

Also, found a recipe called 'Silence of the Lambs Fava Bean Salad.'

What an interesting topic.
 
When I first witnessed the internet at a mates place back in 95 he showed me this website that gave details on how to slaughter and cook a human.

Best part of it was a recipe for a BBQ sauce to go with hit. MMMM MMMM.
