This thread is going in the right direction. Thanks for the heads up on the smokers available here lads. Gonna look into buying one (been using a slow cooker in the kitchen and making my own marinades/bbq sauce). Instead of snags this summer, it'll be pork, brisket and 'slaw'.
 
Served up pastrami today for my kid's birthday and it beat the lamb and pork hands down. Long process though brining for 3 days then smoking for 3 hours and then steaming for 3 hours but wow, worth the effort

You can make one depending on how handy you are and if you can be bothered putting in the time. My uncle has one which is basically just an old steel drum and some pipes connected to an ancient little camp stove which holds and burns the wood chips.
