Hi guys and girls, thought we could start up a thread for our favourite recipes, snacks and homecooked favourites.
If you have any, post in here.
The idea came from the Carlton board( im sure they won't mind).

Here's mine
Awesome Assassins Sausage and Egg Pie.
Ingredients
* 10 sausages
* 3-4 Eggs
* Milk
* Garlic salt
* Puff pastry
* Grated cheese

Method
1. Lay sausages in boiling water for 5 mins
2. Combine eggs, milk and garlic salt
3. Peel skin of sausages ( when cool of course)
4. Lay down pastry sheet, chop up sausages and add egg mixture
5. Add top sheet of pastry and cheese
6. Cook in oven for 30-40 mins at 180 degrees.
7. Enjoy

(Not really good with amounts, but you can figure them out for yourself)

Ingredients:
Vegie oil
Sesame oil
about 1 clove of garlic (1 teaspoon minced garlic)
2 or 3 chicken breasts (use vegie roast slices if you're a vegie)
1 packet of frozen asian vegies
any fresh vegies you like
decent splash of soy sauce
1 big tin of coconut cream
a couple of teaspoons of thai red curry.

Method:
Heat a wok, throw in a good splash of vegie oil and a small splash of sesame oil.
Add garlic and cook for about a minute
Add chicken or vegie roast and cook until chicken is white or vegie roast is heated.
Add frozen vegies and cook until thawed and water has gone from the bottom of the wok.
Add fresh vegies and cook until heated.
Splash on some soy sauce.
Add jar of coconut cream and red curry to taste (2 teaspoons is a mild amount).
Simmer until sauce is thick.
Serve with rice.
 
Good work MBG, i love spicy food.
I sometimes make my own kebabs with george foreman grill.

Grab some soft tortila's
Add chicken, bbq sauce, salad and cheese.
Cooks in 2-3 on the foreman. Superb.

Also works well with bacon, eggs( fried) sauce and cheese.
Sort of like a Hungry Jacks brekkie wrap, but homemade.

Chicken salad (currently the favourite dish around our house because the SO loves it):
  • Chicken breast (1)
  • Walnuts (100g)
  • Capsicum (1)
  • Feta (150g)
  • Basil (sprinklings)
  • Penne (1-2 cups)
  • Italian dressing
Cook the penne, roast the walnuts, cook capsicum (firm) and cook chicken w/ basil until brown (all separately). Combine in a salad bowl, along with crumbled feta, a sprinkling of basil and some dressing. Quantities to your own personal taste, my best guesses at the amounts I use are in the brackets. It's great hot and good cold for lunches/leftovers.

Sounds great except for the capsicum, can I sub in asparagus or something instead?
 
Given to me when in Jamaica, this is the best I do this pretty much anytime we have a BBQ

Chicken Jerk

One chicken (4 chicken breasts may be used if preferred)
6 sliced jalapenos
2 Tbsp. thyme
2 Tbsp. ground allspice
8 Cloves garlic, chopped
3 Medium onions, chopped
2 Tbsp. sugar
2 Tbsp. salt
2 Tsp. ground black pepper
1 Tsp ground cinnamon
1 Tsp nutmeg
1 Tsp ginger
1/2 cup olive oil
1/2 cup soy sauce
Juice of one lime
1 cup orange juice
1 cup white vinegar


Chop the onions, garlic and peppers. These do not need to be chopped too fine as they will be liquidised by the blender
Blend all of the ingredients (excluding the chicken) in a blender to make the jerk sauce.

Cut the chicken up into 4 pieces.

Rub the sauce in to the meat, saving some for basting and dipping later.
Leave the chicken in the fridge to marinade overnight.

The best way to do it is over a charcoal barbeque, but this is not always practical.

So you can Bake in the oven (about 180 - 200)for 30 minutes, turn the meat then bake for a further 30 minutes.

or

Grill the meat slowly until cooked, turning regularly. Baste with some of the remaining marinade whilst cooking.

Chop each quarter chicken portion in to 5 or 6 smaller pieces using a heavy cleaver,through the bone and all.

Serve with salad, rice or bread and the left jerk sauce over for dipping.

Should be able to. I'm not an asparagus fan, so I haven't tried it myself. The capsicum doesn't add much extra flavour, mainly texture.
 
These recipes need to come thick and fast as my mrs declared yesterday that she is sick of what we have for dinner, i am with her, far too many carbs
for example a weekly menu may look like this

Spaghetti Bol

Curry Beef and Rice

Homemade Lamb Kebabs ( leb bread and salad)

Hamburgers

Chicken schnitzel and Ceasar Salad

Homemade Sweet and Sour Pork

Then we change it up with Corned Beef and Pizzas

Instead of Bolognase sauce, substitute can of cream of chicken soup.
Some Mushrooms,Bacon and oinion.
Add to hot pasta.
 
TFB's faux Peking Duck Wraps (not actually duck):

500g chicken thigh
125mL soy sauce
125mL kecap manis (sweet soy sauce)
125mL chicken stock
2 tsp fish sauce
1 tsp minced garlic
1 tsp minced ginger
1/2 tsp ground coriander
1/4 tsp garam masala

1. Preheat oven to 180°C
2. Trim visible fat off chicken (score lightly any thick parts) and put in a casserole dish
3. Mix all other ingedients and pour over the chicken
4. Cook for 1 hr 15min, turning the chicken 3-4 times
5. Seperate meat from sauce allow to cool slightly.
6. Reduce sauce in a saucepan over low heat until it starts to thicken, then remove.
7. Shred the chicken (I use kitchen scissors) and serve with wraps, shallots, bean sprouts and other vegetables of choice. Use sauce in the wraps. It rocks.

I actually make this the night before and reheat it the following night.
 
I am an ordinary cook but what I can cook, I do all right at and it's simple.

Potato or Vegetable bake

Potatoes and or Vegies (sweet potato, pumpkin, zucchini, broccoli, carrot, anything really)
Grated cheese 250g
thinly sliced onion and garlic
600ml of low fat cream. Pura brand is good for kids, preservative free, etc.

Preheat oven to 220' (I think, or maybe it's 200' anyway just keep an eye on it)

In an oven proof dish place one layer of sliced potatoes and vegies with a few thin slices of onion and garlic on top. Sprinkle with grated cheese. Repeat. When layering is complete, pour cream over the top.

Place in oven and bake for about 45mins.

Bacon and Mushroom Cabonara

Thin slices of bacon or diced bacon
Sliced mushrooms
Thinly sliced red onion and a bit of garlic (optional)
1 can of Carnation light and creamy milk
1 tablespoon of cornflour mixed with a bit of water until a milky consistency
pepper
grated cheese
pasta

Start cooking your pasta. In a large pan, fry bacon and mushrooms until brown/cooked through. Pour in the Carnation milk and when it starts to simmer, season with pepper and sprinkle with cheese. When heated through, pour in the watery cornflour mix. When it starts to thicken, turn off heat and mix in your cooked pasta.

Steamed fish and rice


Dory, cod or perch (Sorry, don't know my fish. Just use a plain white one with no bones :o)
Shredded eschallots
Shredded ginger
Light soy sauce
a dash of oil (optional, if skin on fish oil not necessary)

Begin cooking the rice. About 10 mins before it's ready, steam the fish. If you don't have a steamer place the fish in a bowl or deep plate and place that in a larger saucepan full of water. Sprinkle the eschallots and ginger on top of the fish. Bring the water to the boil and it should steam the fish with the lid on top if possible. When the fish breaks up or flakes easily when you take a fork to it, it's ready. Take off of the heat and pour soy sauce over the top and a dash of oil if necessary. Serve with rice.

Apricot chicken and rice (or if you are like me, mashed potato - yum!)

Ok, haven't made this for a really long time but I will try and remember the recipe.

Chicken legs
a can of apricot juice
a packet of spring onion soup
Cut potatoes or carrots (optional)
Rice (or if making mashed potato - potatoes, milk and a tablespoon or two of butter!)

Preheat oven to 220'. Place chicken legs, potatoes and carrots and in an oven proof dish. Mix the apricot juice and the packet of spring onion soup in a bowl and pour it over the chicken pieces. Bake for about 45 mins. Cook your rice or mashed potatoes. When finished serve the apricot chicken on top of the rice or mashed potato. Steamed vegies like broccoli, green beans or corn can be added to the side.

Sorry, acuguy. Just read that you are trying to cut down on carbs. These recipes won't help but maybe just try to reduce your portion size (but I never do though! Just can't help myself! ;))

Some good recipes there Lioness.

As a snack or something quick, i often have Tomatoe sauce, ham, cheese and pineapple or olives in a toasted sanga. It tastes sorta like a pizza.
 
heck yes. or just use some lunch rolls, put some tom sauce or tom paste, which ever, bit of cheese, ham, pineapple, mushroom, olive and wack it under the grill for 2 mins and you got yourself great instant mini pizzas !!

i usually do this for lunch a day or two after we make home made pizza, as there is usually lots of left over toppings to use. good to use up bread rolls that are starting to go stale too.

anyone have any weird or unusual snacks or meals they make ?? i have apple and vegemite sandwiches, which are the best, but cant get anyone to try one. gotta use nice crunchy pink lady apples for the best result with fresh white bread. so simple and so yummy !
 
I'm a pathetic cook with no repetoir at all, so here goes:

Grilled Cheese:

Essential ingredients:
*bagels
*coon tasty cheese
*toaster
*grill
*yum high fat butter

Method:
*Pre-heat your grill
*Very lightly toast 2 bagels
*Slice up adequate portions of coon tasty cheese (not too thick)
*Dress the bagels in your "yum high fat butter"
*Cover the buttered bagels in Coon tasty cheese
*Grill for 4-5 minutes
*Add a tasty sauce such as sweet chilli if you feel so inclined

I gave this a go last night but changed a few things due to what we had in the fridge/cupboard.

I roasted some pumpkin (1cm cubes) along with 2 cloves of garlic (finely chopped) in the oven. I didn't have any walnut, but I did add some baby spinach at the end which wilts nicely from the heat of the pasta and chicken. Also threw in some chopped olives. Topped of with a sprinkling of grated parmesan and fresh cracked pepper... I think it worked...
 
I made this for the wife tonight to try and get my mind off of our plight.

I have next to no skills in the kitchen but lordy, lord was it good.

Hadn't made Pad See Ew for a while but this recipe tastes bang on what you get at a restaurant. Better than the recipes given at Thai cooking classes I've taken both here and in Chang Mai.

Yeah Belgo, there's a few sauces there I'll need to try to whip up me thinks. The peanut satay sauce looks wicked - just need to get down to a health store to get the natural "peanut paste" stuff.

If you're into Thai, my other personal fave recipe is this one.

Not a restaurant dish, but easy to make and the flavours are just heaven.
 
My daughter found this one on the net and made it for us last week. It was delicious. I've offered to hand over cooking duties but she's having none of that!!

BEEF, CASHEW AND THAI BASIL STIR-FRY
400g beef fillet, slice thinly
2 medium red onions, cut into wedges
2 garlic cloves, thinly sliced
4 cm piece ginger, peeled, cut into matchsticks
1 long fresh red chilli, thinly sliced (deseed the chilli if you don’t like it too hot)
1 stalk lemongrass, white part only, thinly sliced
1 tsp Chinese five-spice
1 tbs peanut oil
1 tsp sesame oil
1/2 cup oyster sauce
1/4 cup chicken stock
1 bunch baby choy sum, trimmed
1 cup roasted unsalted cashew nuts
leaves from 1 bunch Thai basil (normal basil will do if you don’t have Thai basil)

1. Combine the beef, onion, garlic, ginger, chilli, lemongrass and five-spice in a large bowl.
2. Heat one quarter of the peanut oil in a wok over high heat until just smoking. Add one quarter of the beef mixture and stir-fry for 2 minutes or until the beef is browned. Transfer to a bowl. Repeat in 3 more batches with remaining beef mixture and oil, reheating wok between batches.
3. Heat the sesame oil in the wok. Add the beef mixture, oyster sauce, chicken stock and choy sum and stir-fry for 1-2 minutes or until heated through and the choy sum just wilts. Remove wok from heat. Add the cashew nuts and the Thai basil and toss to combine.
4. Serve immediately with steamed jasmine rice.
 
^^^ No soy sauce is interesting. You rarely see a stir-fry recipe without either it or fish sauce.

I read this comment before I read the whole recipe and thought to myself "I bet there's oyster sauce then". Sure enough... ;)

Oyster sauce is a pretty good substitute for fish sauce, depending on personal tastes. Not so much for soy, as it's a fair bit heavier and has more flavour.
 
Homemade Gatorade

Cordial diluted with water 2 ltrs
1/2 cup sugar
1/2 teaspoon salt
1/2 cup orange juice
