I like a lot of the different versions of All Along The Watchtower - especially this one by the late, great Jeff Healey (it goes about 9 minutes).

A decent effort, although the Hendrix cover was voted the best cover ever by Rolling Stone and it's hard to disagree.
Other good versions are the Jeff Healy Band and, of all people, Bryan Ferry.
