Hostile mobs in most cases can't spawn over a light level of 7. They should not spawn in daytime, they should not spawn in artificially lit regions. If you hop into bed as soon as it's night, they won't spawn. Only way you can encounter one is if they spawn in a cave and crawl out onto the surface. (some rare cases like certain rare mobs, or mobs already there from the night before who are hiding from the sun).
