I was thinking this during his pursuit of Jey, his heel character is very much based upon being elite, respect for the business, etc.

"I like you, Jey, you're a good man, but you're not a champion even if you have the belt. I am a champion and I will get my belt back."

His character doesn't have any chicken shit tendencies, his matches tend to be cleaner than other heels', and his sole purpose is to excel (with maybe a more than slight aspect of Teutonic stereotype about it). A few tweaks to his promos, maybe a run in to save someone who is outnumbered as it's the honourable thing to do, and his character doesn't really change but all of a sudden he's turned face.

What is interesting about Gunther is he largely achieves great heel work, without resorting to the crutch that most heels need - cheating.
His character is built on respect for the business and the sport (down to the Regal-esque feet wiping before entering the ring) and even as a top heel it is almost anathema for him to disrespect it in pursuit of a win.
So when he DOES cheat, it has so much more impact and is almost shocking that he's been driven to that point.
