Ultimate footy allows you more customisations, plus the ability to run more than one team (AFL Fantasy elite restricts you to one league only I believe). You can choose a scoring system, which takes into account the same scoring methods in DT, but you can customise how many points each stat is worth. Or you can do a category based system, which also uses scoring accuracy, and the team with the most category wins, wins (e.g 6 wins to 3).

AFL Fantasy for me, but I don't mind when we draft or if we do 8 or 10 teams.

The obvious one is Snake Draft. Scratch drafts shouldn't be done any other way.
Depending on overall numbers, but 10-12 teams is the best.
Ultimate footy is the only way I can see of running a draft league. Can't be done on AFL or SuperCoach as they don't have the facilities to run a draft. And then you have the potential issue of a) someone drafting a team that comes above the salary cap (quite likely in a 8 or 10 team league) and B) say you want to do a 3 way trade or a trade involving more than 2 for 2, it can't be done.
 
Also, the week before the season starts I'm always snowed under trying to finalise my DT, SC and SB teams. I don't want to be planning for a draft as well.

What rock have you been under? I can't see these being a problem at all.
