Well, I can't really answer that fully, I don't know about the backgrounds of most of the singers on these shows. However, in Guy's case, it's well documented that he sang regularly at a church, and worked as a singing/music teacher in addition to writing and recording his own songs. He wasn't exactly in the dole queue, he just never got his big break until Australian Idol (he's not exactly your normal heart throb), and I don't think he's necessarily less deserving because he came from a tv show. Whether he and all the others are actually any good at what they do is a matter of opinion.
I will concede there are many poor vocalists who are getting contracts and exposure from these programs. Time will weed these performers out and they'll rightly fall on the scrapheap.

Yeah true, but you'd know that's just a ploy to attract viewers and is another whole argument (for another day!).
Just thinking back to the old Popstars, I think that was purely decided by the judges?? Memory is a bit hazy but I think so.....anyway, if so, that didn't help those groups at all!
