Something that I have noticed the last couple of games I have been to that I hadnt seen before but then again I dont usually sit behind the goals

But at the Port game every point the umpire signalling would wave the flag first then the umpire at the other end would wait and wave when he had finished. Normally it would be at the same time but I can see them changing it with the quick kick in

Yet last week they were all over the place, one of the umpires usually just rushed to wave when up the far end, one of them usually waited but not all the time, so what are they supposed to be doing?

They are meant to wave the flags at the same time. I goal umpired in a lower league and the idea behind having them wave it at the same time is that both umpires are official scorekeepers. Having one wave before the other means that from an operational point of view, there is nothing stopping the goal umpire from the other end falling asleep and missing goals and behinds scored at the opposite end.

Under the "right" system, you would be sure of both goal umpires would be aware of each goal and behind because for one not to notice would leave the other with his flags in the air for a significant amount of time waiting until word moved down the corridor.

Of course, it may be different in the AFL.

It's so the sitting umpire can see that both umpires have correctly waved their behind flags when putting his/her score down. This isn't needed for goals given they can't wave until the partner is ready.
