Actually, Pendles is quite fast when he wants to be, it's just that he rarely puts his foot down, and I'm not sure why that is. In any case, Pendlebury is far better at moving through traffic than Didak, and in my view he is already harder at the ball than him as well. Perhaps my summation of what makes a good midfielder was a little bit simplistic, but I still don't think Didak has the necessary attributes to really excel there.
It's Pendles ability to find the ball in traffic and congestion that puts him aside as a player. In doing this he often A) gets first use of the ball for the team and B) puts another player in a better position. If he didn't have that he would be like I described Didak a running link player.
I'd agree with your simple summary of what is required of midfielders. Of course there are exception but in general that theory works. As for Didak people often reference his most kicks in the league stat for this year. They omit the fact that he had close to (if not) the most handball recieves and a ridiculously high kick to handball ratio.
