Help needed! I am looking to buy a quality set of kitchen knives, something that I can use for years but apart from a few suggestions from friends I am clueless.

Wusthoff (sp?) and Global are 2 brands that have been mentioned. I would really appreciate some feedback based on personal experience. Given the aussie dollar at the moment money/cost is not really a concern.

get a kuhn rikon forged tomato knife. they're damn incredible

tamahagane knives are really nice.

Ice bear look great, but i've never used them and they're really expensive

I use Wusthof knives and love them. Most of mine are the Classic Ikon series, but not my paring knives or filet knives. Those are the straight Classic.

The absolute best knives in the world are made by the Japanese. You can have them handmade. They fold them and forge them like they do/did with Samurai swords and Tanto knives. The problem is that a standard Chef's knife alone will set you back over US $400.00. Ouch. I want one of those but.......

I have a set of Mundial & a set of Global & would have to go with the Global but the Mundial are quite old & still a good set. I think the design of the global knives is more practical for multi uses. Wusthof are great too but you can pay a lot for them depending on the set.

If a woman will be using them the global handle is also a little smaller. They look great too.

I also have some single knives I have bought as I love good knives & getting a knife for a purpose. If your not sure go to a knife shop like King of knives or good homeware store & they can help you with you needs.
 
I have a couple of Global's and they are excellent. Don't waste your money on a set though. A good Chef's knife and Paring knife will do 90%+ of your needs in the kitchen.
 
We got a Global set a few years back for a steal ($150 down from $699 IIRC - in a closing down sale) - by far the best set I've ever used, though listen to Chuck Norris - we've barely used 3 of the knives, whilst the other 2 are used virtually daily.

A good knife elevates your cooking ability.
 
Japanese or German and you can't go wrong.

I got a Wusthof knife over 20 years broke the handle last year they gave me a new one (lifetime warranty):thumbsu:
 
I have Anolon knives. They feel great in your hand, fantastic balance and are very good value for money. Having said that, I keep looking at Wusthof and Global knives and considering changing over.

But I think it all comes down to once getting a good knife set making sure it is kept sharpened, and this is probably where I fall down. I have a basic knife shapening tool, but because I have about 8 different knives they are not always regularly done. I do try to take down for professional sharpening once a year, but that can be hit and miss depending on the person.

As someone said above, you probably mainly use 3 to 4 knives, so I am considering putting the less used knives in a different drawer so I can maintain the blade on the mainly used knives.

Will probably also look around for a course on knife sharpening rather that relying on the basic sharpener and the once a year professional sharpening.
 
I would recommend you to check out Victorinox Fibrox (3-Piece) or Wusthof Classic Gourmet (also 3-Piece).
As for Wusthof, I think it's one of the cheapest sets for such quality. I use it for 4 years already - really satisfied.
