bit of a tangent but i’m sure you’ll indulge me- our kettle died this morning so we had to get a new one. My partner was looking at one that had variable temperature settings… i cannot think of one possible scenario that would require a variable setting kettle that couldn’t be accomplished by a regular bastard- hot kettle with some added cold tap water.

so we got a normal one
Yeah, you want variable temperature just get a bloody urn.

The one for water, not ashes.
 
I really like the Victorinox pairing knife I got when I was packing up my late mother’s things. I have always used their steak knives because they are brilliant and can’t fault this one either.

To be honest, the favourite things in my kitchen are my sharpest knives.

A good knife. I have a collection of knives - one fabulous, a few that do the job and a whole bunch that I just accumulated and are hanging around.

I remember some Gordon Ramsay thingo where he said if you are into cooking - don’t buy a knife set (unless you are wildly rich and worried about having matching things in your designer kitchen).

If you have $500 buy the best all-rounder chefs knife you can get, get it professionally sharpened every 6 months at a butcher that does knife sharpening. Not at one of those shoe repair, key cutting places.

As you acquire more savings supplement your knife supplies as you go, but always buy good quality and if possible from a shop not online so you can test how the handle and weight matches your hand size and grip.
