I love a good steak. I love rib eye and scotch fillet, porterhouse is decent and the old t-bone with mushroom sauce is a pub classic.

I always get medium rare in developed countries. Love it.

In less hygienic places I will get my meat cooked more thoroughly.

So, how do you like your steak BF??

I've always enjoyed my steaks medium-rare. My wife, who emigrated to Australia almost 30 years ago from a third world country, still cannot eat any type of red meat that as anything more than the merest blush of pink. Steaks need to be well-done. It's down to the hygiene issues and the risk of food poisoning. My wife came to Australia from a country where children are more likely to be given Coca-Cola than water because it's easier to trust the bottling process than the local plumbing.

Had steak tartare at a French bistro a few months ago. Had a touch of food poisoning for a few days after, so I'm not keen on visiting that experience again.

For years I always had my steak "blue"
Until I spent a week in hospital with Meningitis in 2005.
Neurologist at the time advised me that although in about 85% of Meningitis cases, they don't actually know what triggers it, a relatively common trait of patients would be to have their steak "blue" or "rare".
His advice was to go at least "medium".
So, since then, I have.

Medium rare. Slow cooked just enough to brown off the pink while keeping the flavour and juices. Tend to also leave the fat on. Even better with some chips/wedges. Know what I'll be having for dinner tonight now.

Basically me as well. Salt, pepper and olive oil and that's it. Did try melted butter instead of olive oil during the week and that worked well also.

My grandmas old recipe. Boil them until soft. Pull them out and cool them down/ dry them out. Fry them once until golden, let them rest then fry them again until crispy. They are amazing!


How long?


That's a reverse sear, cook the steak away from the heat with the lid on the weber until 50 - 55c internal, then rest for a while [up to 30m] as you get the charcoals hot as hell then give them a quick sear, usually takes about 45mins for the first cook.
