How many years should the hierarchy offer our champ? 1,2 or 3?

All are possibilites at this stage.

1 yr - is the clubs stated policy for over 30 yrs olds (which he turns in a few months time).

2 yrs - the middle ground view

3 yrs - players like Macca only come along once in a generation. He is seemingly fit, motivated and playing somewhere near historical highs. Certainly looks like he can go around for another few year. But is 3 too many?

As a moderate of this board I reckon 2 yrs. A reasonable compromise between the champs needs and the clubs previously stated policy (which can be circumnavigated in this instance by re-signing him just before his 30th)
 
If it was up to me I would give him a 1 yr contract, it seems to make him hungrier and work harder. I thought the first 2 years of his current 3 year contract he was at times quite lazy. However, I would expect the AFC will give him a 2 year contract and rightly so. No way would I sign a guy who is turning 30 to a 3 year contract, no matter how much of a club legend he is.
 
I voted for one year.

The club has a very good reason for their policy of one-year contracts for those aged 30+. By definition they are approaching the end of their careers and the end can come more suddenly than they expect - just take a look at Nigel Smart as an example.

I think the club should hold firm on their policy.
