It's pretty simple... really. The people running the place are a combination of: (1) untalented, so they can't tell coherent, complex or elevated stories; and (2) utterly terrified of telling a traditional story.
Imagine a traditional hero's journey, with great effects, positive characters that reflect the audience they have and the world of Star Wars to set it in. That's money in the bank, at least as a one off. But they're terrified of doing anything that appeals to the base. So they try to do "nuanced" stories but can't keep track of the lore and common sense when trying to execute or they try and appeal to a tiny slice of potential viewers at the cost of the expansive core of the Star Wars fandom.
If they did a traditional hero's journey people would complain that it's nothing new and we've seen it plenty of times before. Fans of big franchises are in a perpetual battle with their own expectations of wanting things to be fresh and interesting but also not deviate at all from what they know and are familiar with.
