If you wish to fight it you need to request in writing the reason for termination. My guess is the mate covering wasnt as happy to do it as you think, or they have decided they want your shifts permanantly.

I was working Friday, Saturday nights and Sunday's for months when they were understaffed and they decided to hire more staff to balance the roster and they have had no problems with me working one day a week and havn't mentioned otherwise. The manager said the 7 weeks off was okay as long as my shifts were covered. As for the work colleague, actually quite a good friend of mine and doesn't want Sunday's permanently. Was happy with the extra cash for 7 weeks.So let me get this, works 1 day a week, takes 7 weeks off and expects to still have a job when you want one? I would fire you too.

Nope. There's only 6 employees and we all just cover our shifts amongst each other when required. The manager was present and she okayed it verbally but the problem is that she's Asian and doesn't understand things sometimes. I tried explaining the reason why I wouldn't be working and she said that's fine but may have not fully understood.
Yes the 6 employees are all friends and we cover shifts when required. Over the Christmas period people often go away for a couple of weeks and the rest pick up the slack. Although it is up to the individual employee whether they want to take their annual leave and get paid or simply go without the money until they get back.Can OP clarify if it is standard for fellow employees to take extended periods of unpaid and undocumented leave.
