i reckon it does make a diff. whoever wins tends to pick with the wind to get a good head start in the game. chances are the wind doesnt blow the same exact fashion for three hours, so get in early and you might have it to your advantage when you switch ends as well.

It boosts team morale whereas losing the toss cuts team morale. Anytime a team has an impressive start you can put it down to the coin
 
It makes a big difference to the game when there is a huge breeze favouring one end, eg the infamous Trent Cotchin kicking against the wind vs Port Adelaide in an EF, Quarter time score is 49 - 7.
Yes, they went on to maul us regardless, but momentum is enormous in football as the home side and that start killed any chance we had.

In games where there is no tangible difference between ends, then I don't think it makes a difference.
