The Affair (haven't caught up yet with S5 either) and a few other 2019 shows (e.g. OITNB) weren't finished (or even started) when I did the OP either. Better Call Saul still isn't finished. Yes, I watched S8E3-6 over Xmas. Is there some point to your post? I was unaware this thread was called "Best TV series of the 2010s that finished in the 2010s". If my list was about how many seasons I'd watched rather than (helpfully making available) the timespan of the show, then "S[?]" would logically be there instead.

Have you never heard of bingeing particular seasons at a later date?

After 7 quality seasons, you have a pretty fair idea of where a show places for you. An 8th (and final) season (which I liked anyway) is unlikely to change that in any notable way.
