Ah so most of the cooking will happen in the water, just finished and crisped up in a little oil?
Yep. I saw it recently on a cooking show on Fox. Yet to give it a try myself but it looked amazing.
Chicken deep fried for a few minutes in oil to cook the meat through tends to end up absorbing a lot of oil and the coating is soggy.
